Ikan Tiga Rasa

The taste for Ikan Tiga Rasa, come from the mixture of ingredients of herb. I used Siakap or also known as barramundi fish.

I have two version of cooking ikan tiga rasa.

Here is the first version.

Ingredients for the fish

  • 1 siakap (clean and cut)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/2 cup of cooking oil

Ingredients for red sauce

  • 4 red onion
  • 3 garlic
  • 1 lemongrass
  • 8 bird’s eye chili
  • 300ml water
  • 2 tablespoon chili sauce
  • 2 tablespoon tomato sauce

Instructions

Stir fry the fish

  1. Take the clean and cut siakap and add turmeric powder and salt. Marinate the fish with salt and turmeric powder for 2 mins.
  2. In a frying pan, add the cooking oil and stir fried the fish until it cook well for 15 minutes. Put it aside

Using food processor

  1. Blend the red onion, garlic, lemongrass and bird’s eye chilies using 100 ml of the water.

Sauté the red sauce

  1. Then, sauté the mixture for 5 minutes or until fragrance.
  2. Add in chili and tomato sauce. Cook for another one minutes.
  3. Mixed the fish and the red sauce for another 2 minutes.
  4. Add the remaining 200 ml water this is to make sure it has consistency of sauce.
  5. Ikan Tiga Rasa is ready to be served.

Siakap Tiga Rasa is delicious to eat with white rice.

This is the second version

Ingredients for the fish

  • 1 siakap (clean and cut)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/2 cup of cooking oil

Ingredients for red sauce

  • 2 tablespoon chili oil
  • 1 lemongrass (blended)
  • 2 tablespoon chili sauce
  • 2 tablespoon tomato sauce
  • 200ml water
  • 6 bird’s eye chili
  • 1/2 teaspoon salt

Ikan Tiga Rasa

Instructions

Stir fry the fish

  1. Take the clean and cut siakap and add turmeric powder and salt. Marinate the fish with salt and turmeric powder for 2 mins.
  2. In a frying pan, add the cooking oil and stir fried the fish until it cook well for 15 minutes. Put it aside.

For red sauce

  1. Preheat chili oil.
  2. Add the blended lemongrass. Sauté the ingredients.
  3. Add the chili and tomato sauce, water, bird’s eye chili and salt.
  4. Mix it together until it turn red sauce.
  5. Add the stir fry siakap.
  6. Ikan Tiga Rasa is ready.
