We love pearl Milk Tea.
As pandan leaves is plenty in our compound, thus we decided to make a twist to the Milk Tea using pandan as the main ingredient for the bubble.

Pandan Bubble Milk Tea
Prep time: 2 hours
Cook time: 10 minutes
Servings: 2 drinks
Ingredients
For milk tea
- 3 tablespoons loose-leaf black tea
- 450ml of boiling water
- 50 ml of full cream milk
For caramel syrup
- 100ml water
- 225g palm sugar
- 2 pandan leaves
- 1/4 teaspoon salt
For Pandan Bubble
- 6 tablespoon tapioca flour
- 3 teaspoon wheat flour
- 6 tablespoons freshly boiled water
- 2 teaspoons of pandan extract
- Green food colouring
Prepare the tea
Soaked the loose-leaf black tea with cups of boiling water. Let the tea cools completely.
Prepare the caramels syrup
Add the water, sugars, pandan leaves and salt to a pot and stir it together. Heat the water on medium-high and cook until the water boils and the sugar completely dissolves. Remove the pot from heat and let the caramel syrup cool before transferring to a small glass.
Prepare the pandan bubble

Place tapioca flour and wheat flour in a bowl.

Add a tablespoon of hot water to the same bowl and mix it little by little, until the rest of the water is finished.
Then add in the pandan extract and mix it together.
Add a drop of green food colouring to give it a nice green colour.

Transfer to a flat surface and knead until the dough become smooth.
Roll until it becomes thin and cut them into small pieces.
Roll each piece between your palms to turn them into small balls. Try to make them small in size and able to pass through straws.

Prepare boiling water in a small pot. Add the pandan bubbles to the boiling water and let it cook for 5 minutes.

Remove it from heat. Rinse the pandan bubbles with water. The pandan bubbles is ready.

Assemble the drinks
Put few ice cubes into the glass. Strain 100 ml of tea into a glass. Add in three tablespoons of caramel syrup. Stir it for a while.
Then add 50 ml of full cream milk. Lastly, add the pandan bubble.
The Pandan Bubble Milk Tea is ready.
