Baking is one part of the cooking method. There are others too.
We may stir-fry, deep fry, steam, boil and grill. All of these make the food tasty to eat and to get the best nutrients from it. Nutritional food leads to a healthy lifestyle.
Food is one of many ways for family bonding. Cooking for the family makes the children attached to their mother and home. This is because they can have a hearty meal with family.
The children make a request for a meal they would like to eat.
Like in my case, I bake a cake using butter but because of a special request from my son, I bake cake using coconut oil.
The coconut oil has been ignored in making a cake. It has been neglected by everyone. Many just follow the mainstream by baking cake using butter.
Baking a cake using coconut oil has been done occasionally before but as I try it for the first time it’s good. I want to make the good of it. Thus I want to pursue baking cake and cupcakes using coconut oil.
Living in Malaysia gives me the benefit of having a supply of coconut oil. At first a bit difficult to have the supply but after I venture into baking cupcakes using coconut oil, I know where to find it.
The fragrance of cupcakes using coconut oil
Making cupcakes using coconut oil is the same as making with butter. We have to beat the oil and sugar. Put in egg one by one and beat. After that, then only add in the flour bit by bit.
Heat the oven for 10 minutes and bake cakes for 30 minutes. During this period of baking, the fragrance smell comes out from the oven and fills the entire kitchen.
It smells nice. The fragrance smell of coconut oil that comes from it enhances the good feelings of mine.
The good smell comes from the kitchen making the house lively. There is a gesture of healthy living from the house. I have one expectation: the kitchen indulges with cooking activities to make the house not dull.
Let’s say, no cooking activities in the kitchen. I feel that the house has no soul.
For me, food that supplies our body comes from the kitchen where we cook for a living. Thus, if there is no cooking it has no soul.
The aroma of coconut oil from the baking cupcakes produces a natural diffuser air. For me, it like aromatherapy humidifier at home.
The taste of cupcakes from coconut oil
After 30 minutes in the oven, cupcakes cook. Take it out and let it cool. Take a bite of cupcake and feel the taste.
It has a delicious taste and suite to the taste buds. The plain simple cupcake tastes like coconut milk. It is suitable for vegetarians as it does not have dairy products as an ingredient.
The batter that is made from coconut oil can absorb different flavours. It is plainly dissolved in the batter. It’s neutral taste blends with the flavours.
The flavour I used to add is blueberry, strawberry, pandan, orange, milo and vanilla. The coconut oil makes the marble cake marvellous.
The taste delighted by kids and adults
At the very beginning, the cupcakes that I made were in demand among the kids. Whenever they accompany their parents to the market, they drop by at coconut milk to buy cupcakes made from coconut oil.
Although they feel a bit different in the taste, is indulging. Now, even the adults ask for it too.
It is a healthy snack and easy to grab. It made oneself fuller before having the main meal.
The coconut oil enhances the cupcakes
Baking with coconut oil, the cupcakes texture is moist and soft. The moist texture lasts for four days at room temperature. It subsides the smell of the egg thus enhancing the taste of flavour.
It looks pretty cute in the cupcake liner with the right amount of batter and great smell once it is out of the container to display with casing.
The good from coconut oil
Well, baking cupcakes using coconut oil produces more quantities of cupcakes.
The coconut oil was already in a form of liquid that we don’t need to add milk. The liquid form of coconut oil and the right measurement of ingredients give a satisfaction amount in one size of batter.
The price of coconut oil is lower than the butter. The quality is on par. The goodness of the taste can be enjoyed by everyone regardless of their choice of diet.
Coconut as cooking oil
It is good to make a cake or cupcakes by using coconut oil but it is also good for cooking. Coconut cooking oil is cholesterol-free food and trans-fat-free. It is suitable to enhance the taste of a side dish or dip.
Eating grilled meat, chicken, squid or prawn is good with sauce or dip. We can make any sauce and put in an extract of coconut milk. The extract of coconut milk in the sauce makes it tastier.
The coconut oil is odourless and ideal for high temperature. It is suitable for deep-frying, stir-frying and sauteing. Good to saute vegetable and other mixture.
The storage condition of coconut oil is simple. Keep it in a cool dry place and avoid direct exposure to sunlight. Solidification of coconut oil occurs naturally at a temperature below 25°. It does not affect the quality of the oils.
How to make a chicken curry using coconut oil
Chicken curry is favourite Malaysia dishes and to cook using coconut oil to make it tastier. Now, this Malaysia favourite goes across the continental and sea to meet food lovers in London.
London Street Food Chicken Curry
Prep time: 15 mins
Cook time 45 mins
Serves: 4 person
- Half-cut of medium-sized chicken
- 3 tablespoon of coconut oil
- Curry leaves
- 3 garlic
- 5 cm ginger
- 5 onion
- 5 tablespoon of curry powder
- 2 cup of water
- 4 potatoes
- 2 carrots
- 200 ml of coconut milk
- 1 teaspoon of salt
How to make curry paste
Diced 1 cloves of garlic and 1 onion. Then in a small bowl, mix the curry powder, diced garlic and onion together. To make it into a curry paste, add in 1 tablespoon of water. Mixed it well.
Sauteing the ingredients
Preheat the coconut oil in a pan. Then add in curry leaves and saute in the pan.
After that, saute garlic and ginger until fragrant. After a while, add onion and saute together. Place the curry paste into the pan. And let it cook for 2-3 mins.
Adding the chicken
Then add in chicken let it become half-cooked and blend together for 5-7 mins. After that, add water in the pan. Let it cook for a while.
Adding the vegetables
Add in cut potatoes and carrots. Let the vegetables cook for another 20 mins together with the chicken.
To make the curry
Pour the coconut milk and add in the salt. Let it boil until bubbles coming out for about 10 minutes. Using medium heat.
Ready to serve
To serve, placed rice in a square-shaped plate. Then, pour the chicken curry on top of the rice.
How to stir fry prawn mix veggie
Very simple dish but full of nutrients. There are a lot of vegetables that we can choose from but I choose to mix green bean, carrot and prawn.
Prawn Mix Veggie
Prep time: 10 minutes
Cook time: 15 minutes
Serves : 3 persons
- 2 tablespoon coconut oil
- 1 onion
- 2 clove of garlic
- 1 carrot
- 1 cup of water
- 200g prawn
- 1 red chilli
- 1 teaspoon salt
- 100g green bean
Instructions on how to do it.
Preheat the oil
Preheat the coconut oil. Wait until 30 sec-1 minutes.
Sauteing the ingredients
Saute diced garlic and onion. Let it turn until slightly brown.
Adding the vegetable
Cut the carrot and placed the cut carrot into the pan. Then add in water. Let the carrot cooks for about 5 minutes or until the water boil.
Adding the prawn
Add in the prawn that the skin has already removed. Mixed it together with the carrots. After the prawn turn slightly red, add in the green beans and cook again for about 5-7 minutes.
The prawn mix veggie is ready to be served together with a plate of rice.
Although coconut oil is a bit pricey, I used it to have a better taste for my cooking. There are people, who used it for health purposes.
As for me, it is an add-on ingredient to make my food tasty, creating bonding with my children.
In addition, when people enjoy eating my cupcakes it brings satisfaction to me.
